Residing in Kuantan and originally coming from Kota Bharu doesn't actually allow me to have a bite at my favorite dine-in restaurant, Nando's like I used to. Occasionally, I'll get the chance to dine there but only when my hubby have matters to do in KL or I get to attend courses there. So, I have to resort to what most oversea students do when they crave something; COOK IT ON YOUR OWN!
This might be the most long awaited entry by my bestfriend. Well,this one is for you bubis!
I was aiming to make an exact dish like the one at Nando's; complete with the side dishes :)
So, there's going to be 3 recipes for this entry.
Nando's Peri-Peri Flame Grilled Chicken
Ingredients
- 1 whole chicken (cut into desired portions; I love mine small,easier to eat :P)
- 1 bottle of Hot Nando's Peri Peri Sauce
- 1/2 bottle of Sweet Hot Nando's Peri Peri Sauce
- Some lemon juice.
Since I'm in Malaysia,I got my supplies of Peri Peri sauces from Cold Storage. They offer 4 variations here but my personal pick will be those two mentioned above. You might want to add the Garlic Peri Per sauce too. It is essential that you use only these sauce because if you won't it wouldn't be Nando's chicken, would it?
First, pound the chicken lightly to flatten it. You can also make small
slashes on the chicken. The trick is to allow the marinade to seep
through and through. Marinate the chicken in large zip lock bag with the
above glorious concoction for at least 30 minutes in the refrigerator
or up til 3 days. You may grill it over charcoal BBQ or do it like me,
grilled over the stove or just roast in the oven. While cooking the
chicken, basting it generously with the remaining marinade will add more
oomph! Do not throw away the marinate leftover. You can use it as sauce
later. Once done, please remember to recite Bismillah before eating
